When hitting the Risen Remains, I see that they are being hit but are not taking any damage and cannot be destroyed making it impossible to complete this quest...

Same here, cannot progress through the game
The objects are destructible, I checked it myself. Change the damage-causing skill, get closer, change the world level, try all the options. I managed to get through to Act 3 as a seasonal character.
